The epithelial layer of the gastrointestinal tract is the innermost layer. It is in direct contact with the contents of the digestive tract, and it plays a vital role in digestion, absorption, and immune function. Protection: The epithelial layer protects the underlying tissues of the gastrointestinal tract from damage by physical, chemical, and biological agents. Absorption: The epithelial layer absorbs nutrients and water from the contents of the gastrointestinal tract. Secretion: The epithelial layer secretes a variety of substances, including enzymes, hormones, and mucus. Immunity: The epithelial layer plays a major role in the immune system by producing a variety of immune molecules and serving as a barrier to infection. The epithelial layer of the gastrointestinal tract is folded and contains many villi and microvilli. These folds and projections increase the surface area, which allows for more efficient absorption of nutrients and water. The muscular layer of the gastrointestinal tract is made up of two layers of smooth muscle, an inner circular layer and an outer longitudinal layer. The smooth muscle cells in these layers are arranged in a spiral pattern, which allows the muscles to contract and relax in a coordinated fashion. The muscular layer is responsible for the movement of food and fluids through the gastrointestinal tract. The circular muscles contract to narrow the lumen of the tract, while the longitudinal muscles contract to shorten the tract. This peristaltic movement helps to propel food and fluids through the gastrointestinal tract and mix them with digestive enzymes and other secretions. The muscular layer also plays a role in the absorption of nutrients and water. The contraction of the smooth muscle cells helps to massage the contents of the gastrointestinal tract against the intestinal wall, which promotes the absorption of nutrients and water. Terminology Peristalsis: A series of wave-like muscle contractions that move food and fluids through the digestive system. It starts in the esophagus when you swallow and continues through your stomach and intestines while you digest. Segmentation: A series of rhythmic contractions of the circular muscles of the digestive tract that mix the contents of the tract and propel them forward. Volatile Fatty Acid (VFA): Produced by the fermentation of carbohydrates in the rumen by bacteria. VFAs are absorbed into the bloodstream through the rumen wall and are transported to the liver. The liver then converts the VFAs into glucose, which is used by the body for energy. Rumination: Process of regurgitating and re-chewing food that has already been partially digested. It is a common behavior in ruminant animals, such as cows, sheep, and goats. Rumination allows ruminant animals to extract more nutrients from their food. Aborally: Means “away from the mouth or opening of a structure” Apical: Term for describing the pointed end of an organ or structure. Hypsodont: Refers to the structure of teeth as having short crowns and long roots. Hypsodont dentition allows herbivores to chew and grind their food more effectively.

Terminology Aradicular Hypsodont: Teeth that have open roots and long crowns. This type of dentition is found in herbivores, such as rabbits, rodents, and horses. Aradicular hypsodont teeth grow continuously throughout the animal's life, which helps to compensate for the wear and tear caused by a diet of tough plant material. Brachydont: Term used to describe teeth that have short crowns and short roots. This type of dentition is found in omnivores and carnivores. Brachydont teeth are well-suited for tearing and shearing meat. Buccal Cavity: Known as the oral cavity or mouth. It is the space at the beginning of the alimentary canal. Carnassial Teeth: Modified molars that allow carnivorous animals to shear meat more effectively, which helps them extract more nutrients from their food. Carnassial teeth are also important for defense. They can be used to inflict serious injuries on prey or predators. Deciduous Teeth: Known as primary teeth, baby teeth, or milk teeth. They are the first set of teeth that humans and other mammals develop. They are typically lost and then replaced by permanent teeth. Dentin: Calcified tissue that makes up the majority of a tooth. It is located beneath the enamel and surrounds the pulp cavity. It helps to support the enamel, protect the pulp cavity, and transmit sensations from the tooth to the brain. Emesis: Ejection of the contents of the stomach through the mouth. (Vomiting) Enamel: Hard outer layer of the crown. It helps to protect the tooth from decay, wear, and tear.

Terminology Enteric: Means "of or relating to the intestines" Enterohepatic Circulation: Process by which bile acids are secreted from the liver into the bile, stored in the gallbladder, and released into the small intestine, where they are absorbed back into the bloodstream and returned to the liver. EHC is an important process for the digestion and absorption of fats and other nutrients. Gastric: Means "of or relating to the stomach" Heterodont Teeth: Teeth in the mouth that have different shapes and sizes and are adapted for different functions. Found in most mammals, including humans. Humans have four different types of heterodont teeth: incisors, canines, premolars, and molars. Labial Surface: Surface of a tooth that faces the lips. Parietal Cell: Specialized epithelial cells in the stomach that produce hydrochloric acid (HCl) and intrinsic factor. HCl is a strong acid that helps to break down food and kill bacteria. Intrinsic factor is a glycoprotein that helps to bind and absorb vitamin B12 in the small intestine. Plication: Folds that increase surface area in the intestines, which aids in digestion and absorption of nutrients. Radicular Hypsodont: Tooth that grows for most of the life of the animal, but eventually the root apex closes and tooth growth ceases.

Digestion: Breaking down food into smaller molecules that can be absorbed by the body. Absorption: Taking up nutrients from the digested food and into the bloodstream. The mouth uses teeth and saliva to break down food into smaller pieces. The stomach uses acids and enzymes to break down food even further. Enzymes Amylase: An enzyme that breaks down carbohydrates into smaller molecules, such as maltose and glucose. It is produced in the salivary glands and pancreas, and it is released into the digestive tract where it helps to digest starches. Lipase: An enzyme that breaks down fats into smaller molecules, such as fatty acids and glycerol. It is produced in the pancreas and released into the small intestine, where it helps to digest dietary fats. Prostaglandins: Regulate gastric acid secretion, protect the stomach lining, promote the healing of stomach ulcers, regulate intestinal motility, and reduce inflammation.

These effects help to protect the digestive tract, promote digestion, and improve nutrient absorption. Cholecystokinin: Hormone that is produced by I cells in the duodenum and jejunum. Stimulates gallbladder contraction, pancreatic enzyme secretion, inhibits gastric emptying, and induces satiety. These effects help to break down foods, promote digestion, and prevent overeating. Proteases: Breaks down proteins, promotes the growth of beneficial bacteria, protects the gut from harmful bacteria, reduces inflammation, and regulates blood sugar levels.
